Chili Relleno Casserole
We usually double this recipe in Coffee Cart
Mix the first five ingredients together - this will be oured over the chili's and cheese
5 eggs
2 Tablespoons flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup of evaporated milk
Green chili's (enough to spread out on the bottom of the baking pan)
1 cup of grated cheese
1/2 cup of chopped green onions
1 can of Ro-Tel canned tomatoes with diced green chili
Add anything else you might like, mushrooms, olives, ham, whatever you like!
Spray the casserole dish with Pam
Layer the bottom of the pan with the green chili's, green onions, Ro-Tel tomaotes, and the cheese. Finally, pour the egg mixture over the cheese and chilies. Bake at 350 degrees for 35 minutes.
